Fresh made guacamole beats the store bought stuff any day of the week. And it really is very simple to make. Guacamole can include many variations but for this one I am keeping it rather simple.
Ingredients:
Two small avocados- I prefer Hass, but feel free to experiment!
One small lime
One or two garlic cloves
A handful of cilantro
A handful of tomatoes (if you wish, I was in a tomato mood)
A pinch of kosher salt
Halve the avocados, scoop out flesh and place in a dish.
Dice the cilantro. I like to gather it in a bunch and push it out little by little while slicing.
Using a garlic press, add one or two garlic cloves to taste. Squeeze half of your lime into the bowl with the avocados and garlic. Mash with a fork.
Add cilantro, diced tomatoes and salt to taste. Fold into mashed avocado mixture.
Other than chips, I like to eat this on salads and sandwiches. You could probably also top grilled chicken with it or serve with grilled shrimp. If you want to add spice, add a diced jalapeno. If you want it ultra indulgent add some mayo and freshly fried bacon crumbles. For best flavor make sure your avocado is ripe and gives slightly when pressed with a thumb. I was just talking to my mother last weekend about how to make guacamole, I didn't realize it was so easy. Is there anything else that tastes as good and is as simple? I must start eating more! When we were driving down the coast in southern California someone was selling them on the highway for 10 for a dollar. *swoon* Google tells me you have avo's in Florida also but they are bigger and lower calorie.
ReplyDeleteGuacamole is such a weakness of mine. Glad this was a timely post! I have missed ya! Yes, Sunnee and Lauren mention how affordable they are for them in Cali. I bought some today on sale for $1 each. We do have FL avocados. My former stepdad has a huge avocado tree in his backyard. They are good but not as creamy and flavorful as the Hass to me. I hope you get a chance to whip some up and let me know what you think!
DeleteI wish I liked guacamole because I didn't realize how simple it is to make. I'm not real big on avocados, though. I think my husband likes guacamole, so maybe I'll be nice and make it for him sometime, LOL!
